Cosmic Crush Pear is fermented using wild year strains Brettanomyces and Cher Ami (Overworks house mixed culture) and foeder aged whch creates a balanced acidity. Madernassa pears from the Roero region of Piedmont in Northern Italy are thed added for refermentation.
Aromas of ripe cut pear. Freshly bailed hay, fleshy pear, and dusty funk to taste. A deft dry delivery with mouthwatering acidity. Expect a Perry-like tartness balanced with a sweet poached per flavour. Clean, balanced, light and refreshing to finish.
