Drygate say “Unfinished Symphony is the first wild beer we have ever released. Refermented in a red wine barrel with a mixed culture of Brettanomyces, Lactobacillus, and Pediococcus, this 7.5% oat wine now belongs to the bugs. We gave it structure, and they give it a flavour profile that will never be truly complete, as over time the yeast and bacteria will continue to act on this ever-changing beer.
